You need this.

My dear friend, Beth, came over for a newborn shoot the other day and brought over this salad.  Yes, she has a brand spanking new baby (plus another kiddo at home) and made food for me.  It's messed up.  But this is our B and she's amazing like that.  

After her visit, I obsessively scoured the internet looking for this recipe of Giada's online but came up with nada.  Beth has since sent over a snapshot from the new cookbook and now here I am making it for the first of a million times and sharing it with all of you fine people because YOU NEED TO EAT IT AS SOON AS HUMANLY POSSIBLE.  Seriously.

It's delightfully tropical and fresh and the perfect way to reintroduce your taste buds to spring.

Chicken, Mango, Black Beans with lime-almond dressing 
(serves 6)




salad:

2 cups (1/2 inch) diced cooked skinless chicken breast

1 large mango, peeled, seeded, and cut into small cubes (about 1.5 cups)

2 (4-ounce) Persian or pickling cucumbers, scrubbed and cut into small cubes

1 (15 ounce) can black beans, rinsed and drained

2/3 cup sliced almonds, toasted

1/2 lightly packed cup fresh mint leaves

dressing:

Grated zest of 1 large lime

1/3 cup fresh lime juice (from 2-3 large limes)

1/4 cup honey

1 tablespoon Dijon mustard

2 tablespoons chopped fresh mint leaves

1 teaspoon kosher salt

1/2 teaspoon fresh ground black pepper

1/8 teaspoon cayenne pepper

1/3 cup creamy almond butter

for the salad: in a large bowl, combine the chicken, mango, cucumbers, 
black beans, almonds, and mint leaves

for the dressing: In a small bowl, whisk together the lime zest, lime juice, honey, mustard, mint, salt, black pepper, and cayenne pepper.  Add the almond butter and whisk until the dressing is smooth and thickened.

Add the dressing to the salad and toss to combine.  Serve chilled.

*the only change I made to this recipe was to dice everything into bite sized pieces to make easier for my kids to eat.  Because, yes, they love it too!

Mickey's MN to CA Digs.

Earlier this week we made a day trip up North to meet our brand new nephew McCoy aka Mickey aka Dan's-utter-clone.  I am not only obsessed with that little dude and his parents but went a bit gaga for his nursery too!  My sister does an incredible job with decor - and more important - decor on a budget.  Now that she and I are (thankfully) back in the same state again, we've decided to team up and put our mutual love for "design on a dime" to good use.  Details are in the works but I will have more to come very soon. 

Oh and another things-are-crazy-and-changing-so-fast FYI; this site will be going back to it's roots and be used for personal happenings and other Katy nonsense only.  Latest photography work currently can be found HERE.

Will share more info when official site and blog revamp happens in the coming weeks.

I know this flash back is quite belated but I am not willing to let last year go without a quick recap of all of the beautiful people and experiences I spent time with in twenty twelve.
