Orzo Salad.

Another spectacular dish delivered to us post-delivery. 
I'd suggest whipping up a big ole batch to store in the fridge.  
Perfect for on-the-go lunches, a dinner side dish, snack, etc...whatever you please.


From dear friend, Stacey:

Cook 2 cups orzo according to package
Drain and cool on a cookie sheet coated with olive oil
Toast 1/4 cup pine nuts for 2-3 min
2 cups arugula or spinach
1 cup basil leaves, chopped
1 cup dried cherries
3 tblsp of lemon juice or 1/2 lemon
Feta cheese - amount to your liking
1/4 cup olive oil
Salt and pepper

Combine all together. 
It's best if you marinate it over night.

We recently took new headshots of her to use in a publication that she writes for regularly.
Striking, yes?  Baby's got some beautiful elders.

What They Say Is True...

...it goes way WAY too fast.  
Look at what a little nugget you were, my Stella.  This photo...just over three weeks old.
Already you have yummy rolls forming on your arms and legs and the cheeks are getting perfectly chubby.   If we're apart for even five minutes, I swear in that time you've grown.  Do not get me wrong, I'm enjoying every moment of this.  But I will always have dreamy, euphoric memories of the beginning.  When we were first introduced.  When we learned how to make you full.  And happy. When you were fresh from the belly.  My big old belly.

Cheers.

Nana and Papa babysat a few nights ago (THANK YOU) so we could go HERE for dinner.
The food was excellent.  And my one drink was excellent.  
But it made me get a little not-so-excellent drunk.
Pump and dump - I hate you.


You better believe that on our first night off of kid duty, we talked about Miss Stella Bea the entire time. 
You also better believe that we are huge dork parents for taking the above pictures.
You better believe it.  Better.

Wild Rice Salad.

Yet another delicious dish made by Mom (Nana).  Recipe courtesy of one of her best friends; the lovely Trish.  
Perfectly filling, perfectly fall, perfectly perfect.


1 1/2 cup wild rice
2 chicken breasts
½ red pepper, diced
3 green onions, diced
¾ cup peapods, sliced on diagonal in 1” pieces
2 avocados, cut into chunks
1 cup toasted pecans

Dressing:  
2 cloves garlic - ¼ cup rice vinegar -1 tsp salt - 1/3 c vegetable oil
½ tsp pepper -1 TB Dijon mustard - ½ tsp sugar

Cook wild rice in chicken broth, drain, toss with 1 TB lemon juice, and chill.
Poach chicken breasts, chill, then cut up in small pieces.
Make dressing.  Toss with rice and chicken.  Add red pepper, onions and peapods.  
Just before serving, add avocados and pecans.

Lucy's Molasses Cookies.

Remember Lucy's Famous Ham Sandwiches?  I mean, how could you forget?  Really. Here's another sweet treat for you to indulge in made by the same sweet little lady.  Mom (aka Nana) whipped up a batch two days ago and already the entire freezer bag has been demolished.  Gobble gobble.  Pregnancy weight, what?  Tis the perfect fall cookie.  



Ingredients:  
3/4 C. Vegetable Oil - 1 C. Sugar - 1 Egg - 1/3 C. Molasses (MIX)
Gradually add the following dry ingredients...
2 tsp. Cinnamon - 1/4 tsp. Clove - 1/4 tsp. Ginger - 2 tsp. Soda - 2 1/4 C. Flour

Mix until thoroughly blended.  

Roll dough into tablespoon sized balls.
Then coat in remaining white sugar.
Place cookies two inches apart onto greased baking sheets.
Bake at 375 degrees for 8 mins.

Quinoa Salad with Dried Apricots.


1 c. quinoa
2 tsp olive oil
2 cloves minced garlic
1/2 c. dried apricots, chopped coarsely
2 c. H20
1/4 tsp. salt
2/3 c. dressing (over)
1 c. grape tomatoes
1 small red onion chopped
8 c. baby spinach
1/4 c. sliced almonds toasted

Dressing:  1/3 c. lemon juice - 1/4 tsp cinnamon - 2 T. nonfat plain yogurt - 1/3 tsp ground ginger - 1.5 tsp honey - 1/4 c. olive oil - 1/4 tsp cumin - salt & pepper

Prep:  toast quinoa in dry skillet over medium heat, stiring, until becomes aromatic and starts to crackle (5 min).  Transfer to fine sieve and rinse well.  Heat oil in medium sauce pan over medium heat.  Add garlic, stir 1 min.  Add apricots, quinoa.  Continue cooking until quinoa has dried out and is light golden (3-4 minutes).  Add water, salt, bring to boil;  turn down heat to medium low;  simmer uncovered until quinoa is tender; liquid is absorbed (15-18 min).  Make dressing.  Transfer quinoa to bowl and toss with dressing (1/3 cup).  Cool.  Just before serving add tomatoes and onions.  Toss with spinach and remaining dressing.  Mound on spinach and sprinkle with almonds.

Brady's Farmer's Market Lasagna.

Our friends have just been spoiling us with grub. My belly is in heaven.  
And to not have to think about what to cook with a newborn in the house...phew.
Here's a pasta dish THIS lady's sweet fiance whipped up for us last Friday.
Mmmm...love me some goat cheese.  


The lasagna lowdown - from Chef Brady, himself:

1 lb. lasagna noodles,  - 1lb. Turkey sausage & meat (each)  - 8 oz. goat cheese - 15 oz. ricotta
15 oz. cottage cheese - 30 oz. crushed tomato - 3 heirloom tomatoes - 2 orange tomatoes
handful of white mushrooms - whole garlic clove - 1lb. spinach - 1lb. mozzarella
whole white onion - 1/4 cup of red vino & balsamic

Mix the ricotta and cottage cheese in a bowl and set aside.  Brown the turkey sausage and meat (separately) - they will become individual layers .To make sauce, place diced heirloom tomatoes and crushed tomatoes in another pan and bring to a boil. Add vino and balsamic.
When ready to bake lasagna, sauté the sliced mushrooms, orange tomatoes, garlic, and onions.

The layers (from bottom to top)....           
sauce/noodles/ricotta-cottage mix/spinach/noodles/turkey meat/mozzarella/sauce/noodle
sauteed veggies (add garlic)/melted goat cheese/noodles/spinach/turkey sausage
ricotta-cottage mix/noodles/rest of sauce

Cook for about an hour and a half @ 400 degrees.  Don't boil/soften noodles before making.  
With 20 minutes left, add the rest of the mozzarella cheese until browned.

Beet & Peach Salad.

Nana has been cooking up a storm for us.  
See salad from our dinner last night below.
Make it.  Eat it. Yu-hum.


  • 2 beets, scrubbed
  • 1 bunch mache (lamb's lettuce), rinsed and dried
  • 1 bunch arugula, rinsed and dried
  • 2 fresh peaches - peeled, pitted and sliced
  • 2 shallots, chopped
  • 1/4 cup pistachio nuts, chopped (we used walnuts)
  • 1 (4 ounce) package goat cheese, crumbled
  • 1/4 cup walnut oil (we used olive oil)
  • 2 tablespoons balsamic vinegar
  • salt and pepper to taste

Siriously Stella(r) Cookies


Auntie Siri came by to visit us just hours after Stella was born.
She brought the most delicious cookies
We (obviously) devoured them.  Almost immediately.
This was not, of course, the end to treats delivered by the culinary master.  
More on that to come...

Introducing...

Stella Bea was born September 1st, 2011 at 6:52 AM.
Measured 7 lbs 10 ounces and 21.5 inches long.
Made her appearance pretty darn easy on Mama.
Loving her to pieces.
We. Are. Smitten.
